Prepare the Spicy Garlic Mayo first. Mix all ingredients together throughly in a small bowl and set aside in the refrigerator to cool.

Cut the French rolls in half lengthwise.

Cut the provolone cheese in half.

Add a full slice (2 cut portions) of provolone cheese to one side only of each French roll and place on oven safe pan.

Heat the stove top to Medium heat.

Add the 2 strips of bacon. Cook the bacon till crispy. Crumble bacon into small pieces and set aside.

In a large skillet add the all of the vegetables into the remaining bacon grease. Heat until onions start to caramelize (about 4-5 min). Take the vegetables off the heat and set aside in a bowl.

Increase the stove-top to Medium-High heat and add in the beef. Add a pinch of Garlic Salt and a dash of Chili Oil for flavor. Stir beef until the beef just starts to turn brown (2-3 min).

At this point you should turn the oven broiler on to Low heat and place the cut French Rolls with Provolone Cheese directly underneath the broiler.

Add the vegetables and crumbled bacon back in with the beef and add 2 full slices of provolone cheese on top of the mixture. Stir the beef, vegetable, bacon and cheese mixture until the cheese has melted (about 2 min). Reduce heat as necessary.

Remove the skillet from the heat.

Remove the French rolls from the oven once the rolls are lightly toasted and the cheese is slightly melted.

Let the French rolls cool for about a minute and then add the Spicy Garlic Mayo Spread to the non-cheese side.

Spoon in a ample portion of the cheesesteak mixture and serve.
