Spicy Cheese Bread

   Preheat the oven to 375u00b0F Lightly grease a baking sheet. For the dough, sift flour and salt into a large bowl, then add the butter, rubbing in lightly with fingertips. Make a well in the center. Pour in milk. Using a blunt knife, mix quickly into a soft, sticky dough. Do not overmix. Turn out onto a lightly floured surface. Knead lightly, then press or roll out into a circle, about 1 1/2 inches thick. Place on the prepared baking sheet.

   For the topping, combine all ingredients in a small saucepan and heat gently until butter and cheese are melted. Spoon on dough, then bake 20-25 mins, until golden and firm. Cool slightly on a wire rack. Serve warm with extra butter.
