For the salsa: Combine all ingredients in a bowl, mix well and chill until serving.

Top with extra cilantro for garnish.

For the burgers: Mash/process black beans and put them into a large bowl.

Add 1/2 cup breadcrumbs, egg, sunflower seeds, sesame seeds, salt, pepper, cumin, chili powder and hot sauce.

Mix and then add corn, onions and peppers.

If the consistency of the mixture is still too moist add more breadcrumbs until you are able to form patties (mixture will still be soft so dont make it too dry, I would err on the moist side).

Add cilantro just before forming patties of your preferred size.

Salsa recipe inspired by The Pioneer Woman, Burger recipe adapted from Eat, Live, Run Cook patties in a skillet on the stove top or on the grill over medium heat until both sides are darkened (about 10-15 minutes total).
