Preheat the oven to 400u00b0F. Crush the coriander seeds, allspice and cumin seeds in a mortar and pestle. Place the spices in a pan, add the garlic then lightly toast without oil for 1-2 mins, until fragrant. Remove from the pan and leave to cool.

Mix the spice mixture, chili, parsley and oil together and season with salt and pepper. Rub the peeled beets with the mixture then place in parchment paper parcels and pour over remaining spice-oil mixture. Close each parchment parcel either by folding repeatedly or by tying it with kitchen string. Place the parcel on a large baking sheet and bake for 50 - 60 mins until the beets are tender.

Open the parcels and crumble over the goat cheese. Serve with sliced baguette.
