3 cups sugar
3/4 cup red wine
1 star anise
3 cardamom pods, bruised

1/4 cup honey
8 quinces, peeled and cut into wedges then cored
Mascarpone Cream
250 g mascarpone
1 teaspoon vanilla extract
1/4 cup confectioners' sugar
