Turn your flame to high, heat the frying pan, then add canola oil. Allow to heat. Add one handful of long grain rice for each person. Allow rice to brown stirring constantly to prevent charring. (Note: A little char adds a little flavor) Once rice is browned, add sliced onions, bell peppers and lastly the tomatoes. Allow the searing of the vegetables while still stirring the rice. Once you have reached the desired tenderness of the vegetables, add the can of tomato sauce and fill the frying pan with water, just enough to cover the rice. Add the salt, pepper, cumin and garlic (powder)and chopped cilantro. DO NOT MIX! Just cover and wait for a boil. Once it begins to boil, reduce heat and allow to simmer (approx 20-25 mins). If the rice becomes dry, add a little water. If the rice has reached the intended texture, remove lid and allow to cool.
