Wash and dry spinach. Heat oil in large pan. Add spinach and green onions and cook until spinach wilts. Place in colander to drain. When cool, squeeze out the water from the spinach.

In separate bowl, crumble feta cheese, mix in garlic, parsley, nutmeg and pepper to taste. Combine the mixture with the spinach.

Use with filo, puff pastry or your choice of pastry. See separate recipe for the pastry I use.

Roll pastry thin and cut in squares. Add spinach mixture to the middle and fold up the 4 corners. Optionally seal the packages with egg wash.

Bake in preheated 350 degree oven until pastry is golden. Remove from oven and cool on racks.

Note, the spinach pies freeze well.
