Ingredients: 1 lb. fillo; 2 lb. spinach; 4 to 5 eggs; 1 lb. Feta cheese; 1/4 lb. butter (1 stick); 1/2 c. chopped parsley; 1 bunch scallions and 1 whole onion; 1/4 c. chopped dill; 1/4 c. chopped mint; dash of salt and pepper

1 lb. fillo
2 lb. spinach
4 to 5 eggs
1 lb. Feta cheese
1/4 lb. butter (1 stick)
1/2 c. chopped parsley
1 bunch scallions and 1 whole onion
1/4 c. chopped dill
1/4 c. chopped mint
dash of salt and pepper

Wash thoroughly and drain the spinach well.

Sprinkle with salt.

Squeeze spinach to drain all water.

Saute onions, parsley, dill and fennel in a frying pan. Let cool.

Beat the eggs.

Cut the cheese, then mix all together with spinach.

Brush each sheet of fillo with butter and place in pan 8 to 10 layers.

Put your mixture in pan and add remaining 8 to 10 sheets of fillo on top.

Brush each with butter as you go along. Fold edges under and bake at 350u00b0 for 1 hour.
