Drain cherries and reserve juice in a saucepan. Add sugar and lemon gelatin to cherry juice. Heat over medium heat, stirring with a wire whisk until gelatin dissolves and mixture is smooth. Remove from heat and set aside. Meanwhile, in a small bowl, soak plain gelatin in 1/4 cup cold water; add to warm cherry/lemon gelatin mixture. Stir to mix well. Pour this gelatin mixture into a large mixing bowl. Add cherries, undrained pineapple, grated rinds and juices, salt and nuts, if desired. Stir to blend well. Pour into a 9 x 13 x 2-inch casserole dish or spoon into 12 to 14 individual gelatin molds. Refrigerate until firm. Overnight is best to ensure correct texture. Serve with Marshmallow Dressing if desired. Makes 12 servings.
