Sorrullitos (Fried Corn Fritters) with Mayo-Ketchup Dipping Sauce

   Boil water in a small saucepan on high.

   Add sugar, salt and butter.

   Change temperature to low.

   Add cornmeal and stir until a dough forms.

   Take saucepan off heat.

   Let the mixture cool for a few minutes.

   Prepare logs by taking about 2 tablespoons of dough and rolling it into the shape of a log.

   If adding cheese, form dough into disk, add cheese in the middle and roll the dough around the cheese.

   Heat enough oil in a heavy pot so that the oil is deep enough to cover the logs.

    Put a few logs into the hot oil.

    Fry logs until golden on all sides.

    Remove them from the oil using a slotted spoon and set them on a paper towel lined plate.

    Repeat frying the rest.

    In a small bowl combine mayonnaise, ketchup and hot sauce for dipping sauce.

    Variation: For a sweeter treat, omit cheese, and sprinkle the fried logs with some powdered sugar mixed with cinnamon after frying.
