Soft Chocolate Cookies

   Melt chocolate and butter in a bain-marie or double boiler (or a bowl set over a pan with simmering water, being careful not to let the water touch the base of the bowl). Set aside.

   Mix eggs, sugar and rum. Add melted chocolate.

   In a separate bowl, blend flour with salt, baking powder and cocoa. Gradually stir in the chocolate mixture.

   Preheat oven to 150u00b0C (300u00b0F) and line a baking tray with parchment paper. With a teaspoon, shape small dough balls, leaving 4 inches space between the cookies. Bake for about 10 minutes.
