Preheat your oven to 375 degrees.

To a large bowl add the butter and sugars. Mix until well combined using a hand mixer.

Add in the eggs and vanilla, again mixing until well combined, about a minute.

In a small bowl mix together the graham cracker crumbs, flour, baking powder and salt.

Add half the dry ingredients into the wet mixture, mix until mostly combined. Add the remaining dry ingredients in and again mix with the hand mixer until mostly combined.

Add in the chocolate chips and mix with a wooden or rubber spoon.

Using a small cookie scoop, scoop the dough out onto a parchment lined baking sheet.

Take one ball of dough in your palm, gently press down then place a piece of marshmallow on top and another piece of dough on top of the marshmallow... like a cookie marshmallow sandwich.

Press the dough together and roll in your palm like you would a meatball to ensure its closed well around the marshmallow.

Place onto the lined baking sheet, about 2 inches apart, press down on each cookie ever so slightly.

Bake for 10 minutes. {my tip: I find that the cookies bake up better when I only do 1 baking sheet at a time, starting the baking sheet on a rack in the lower half of the oven for 6 minutes then move it to a rack in the upper half of the oven for the final 4 minus}

Allowing the cookies to set/cool on the baking sheet for a minute before moving them to a drying rack.
