Ingredients: 1 lb smoked sausage, cut into 1/4 slices; 1 medium onion; 3 cloves garlic, minced; 2 medium carrots, chopped; 4 medium potatoes, cut into large chunks; 4 cups chicken broth; 2 cups frozen corn; 1 tablespoon dried parsley; 2 sprigs fresh rosemary or 1 teaspoon dried rosemary; salt and pepper

1 lb smoked sausage, cut into 1/4 slices
1 medium onion
3 cloves garlic, minced
2 medium carrots, chopped
4 medium potatoes, cut into large chunks
4 cups chicken broth
2 cups frozen corn
1 tablespoon dried parsley
2 sprigs fresh rosemary or 1 teaspoon dried rosemary
salt and pepper

In a dutch oven or large saucepan, saute the sausage until browned.

Remove from pan and set aside.

Drain all but 1 teaspoon of the grease and cook the onion and garlic for a couple of minutes, stirring frequently.

You could drain all the grease and just add a little oil to saute the onions and garlic.

Stir the carrots into the pan and saute for another 2 minutes.

Add the broth and potatoes.

When the potatoes and carrots are nearly as tender as you would like; add the corn, parsley, rosemary and salt and pepper.

Cook for 3-4 more minutes.
