Simple Lemon Roast Chicken

   Preheat oven to 350F.

   Rinse the whole chicken and pat it dry.

   Pour 2 tablespoons of oil into the bottom of an oven-proof casserole that has a lid, and put the chicken in the casserole.

   Drizzle oil all over the chicken.

   Cut the lemon in half.

   Cut one half into thin slices, and cut the remaining half into 2 pieces.

   Sprinkle Italian seasoning all over the oiled chicken.

   Season with salt.

   Then place lemon slices on top of the seasoning.

    Jam the remaining 2 pieces of lemon into the chicken cavity.

    Cover the casserole and place in the oven.

    Bake for 2 hours, taking the lid off for the last 20 minutes or so to brown and crisp up the skin.
