Peel the apples and soak in salted water (to keep the apples from browning).

Heat all of the ingredients, then add the apples from Step 1 once it comes to a boil.

Cover the pot and boil the apples for 15-20 minutes.

Put the apples from Step 2 in a bowl and set them aside to cool.

Cut into bite-sized pieces and set aside.

Cut the puff pastry sheets in half and cut long slits in half of the sheets as shown.

Place the apples from Step 3 on the sheets of puff pastry without slits.

Lay the sheets of puff pastry with the slits on top and brush the edges with egg yolk.

Use a fork to press the edges down to seal the pies.

Brush the surface of the pies with egg yolk (to add shine).
