Ingredients: 2 tbsp very finely grated mature Cheddar cheese; 2 tbsp very finely grated Leicester or other red cheese; 2 tbsp very finely grated mature Gouda; 1 whole spring onion ,chopped finely; 1/2 small red onion , finely grated; 1/2 very small courgette, finely grated(optional); 1 tbsp real mayonnaise; 1 good pinch fresh cracked black pepper; 2 slice of mature Cheddar cheese; 4 slice of Ryvita, other crispbread or another rustic bread

2 tbsp very finely grated mature Cheddar cheese
2 tbsp very finely grated Leicester or other red cheese
2 tbsp very finely grated mature Gouda
1 whole spring onion ,chopped finely
1/2 small red onion , finely grated
1/2 very small courgette, finely grated(optional)
1 tbsp real mayonnaise
1 good pinch fresh cracked black pepper
2 slice of mature Cheddar cheese
4 slice of Ryvita, other crispbread or another rustic bread
