cut watermelon and remove all seeds.

peel the skin off and chop into 11/2 inch (4cm) cubes.

Take one cup of the watermelon and blend it to make juice.T o the juice add chilli,turmeric,coriander powder, garlic puree and salt to taste

heat oil in wok add cuminseeds and as quickky as 20 seconds add the watermelon juice mix.

lower heat and simmer for 5minutes.The liquid needs to reduce by a third.

If you are using sugar add now then add lime juice .cook for a further minute.

add the watermelon and cook over a low heat no more than 4minutes gently turning it until melon is covered with spice mixture.

the flavour of this dish is hot.sweet and sour.

you can supstitute some of the chilli powder for paprika wich makes the dish milder.

serve with rice,naan bread or on its own.
