Mix in a bowl the sugar with the cinnamon, nutmeg, vanillia and the lemon zest. In another bowl melt the butter and add the oil to it.

Put a sheet of the pastry on the table and spread butter on top of it. then pt another sheet of pastry on top. Spread some of the apples on the sheet, evenly add the sugar mixture and finally spread some walnuts. Roll the pastry sheets with the mixture into a roll and put it in the pan. Do the same until the pan is full.

Spread some butter on top of the pastry sheets and put it in a pre-heated oven at 200 degrees on the lowest level. After around 15 minutes lower the temperature to around 180 and raise the pan to the middle level of the oven. Bake until the pastry is slightly brownish and crunchy. Take it out of the oven, spread some butter and apple juice on top, if you have any left from the apples and let it cool down covered with a piece of cloth. Cut it into smaller piece while it's still warm.
