Combine first 8 ingredients and one egg in a bowl and mix well. Let sit in refrigerator for at least 1 hour to firm up.

Place remianing egg in a bowl and cornmeal on a plate.

Remove shrimp mixture from the refrigerator and make medium sized patties. Place the patties in the egg wash and then into the cornmeal to coat the outside of the patty.

Place the frying pan on med-high and place 3tbsp of oil in the pan. place each patty in the pan and cover (feel free to add more oil if needed). Cook for 5 minutes on each side or until each side is brown.

Remove patties from the pan and place on papertowels to catch the oil.

In the mean time make the tartar sauce by mixing the mayonnaise, relish and lemon juice in a bowl.

Place one patty on each toasted whole wheat bun, with lettuce, tomato and tartar sauce.
