   1. Set the fryer to 300 degrees. You will fry the potatoes at this tempurature and then later at a higher tempurature to crisp them.

   2. Cut the peeled potatoes into allumette and soak them in salted water for 30 minutes. Drain them and pat them dry with paper towels. Remove the baskets from the fryer and add the potatoes. Let them swim, moving them around with a skimmer. When they are cooked through but not brown remove them with the skimmer and drain them in a bowl lined with paper towels.

   3. Turn the fryer to 400 degrees and at service add the parcooked fries. Cook them with the swimming method until they are golden brown. Drain them in a bowl lined with paper towel. Salt them, pull out the paper, toss to coat with the salt and serve.
