1 large onion, chopped
2 -3 tablespoons butter
1 bay leaf
1 tablespoon salt
¼ teaspoon pepper
4 cups cabbage, shredded
1 ½ cups leeks, chopped (white part only)
1 ½ cups celery, diced
1 cup carrot, grated
10 cups water

Simmer beef shanks in water (see note)with bay leaf, salt and pepper for 2 1/2 to 3 hours.

At the same time brown onion in fry pan, then simmer along with meat.

Add remaining ingredients and simmer 15-30 minutes longer.
