Cut a round from each slice of bread with a 2 3/4-inch round cookie cutter. Pulse shrimp, 2 green onions, egg white, cornstarch, soy sauce and pepper in a food processor until smooth.

Place sesame seeds on a large plate. Spread shrimp mixture evenly on bread rounds. Press bread, shrimp-side down, on sesame seeds to coat evenly.

Heat oil in a large heavy-bottomed saucepan on medium heat (oil is ready when a cube of bread crisps quickly without absorbing oil). Deep-fry shrimp toast, in batches, shrimp-side down, 1 min. Turn and cook, 30 seconds more, or until bread is crisp and lightly browned. Using a slotted spoon, transfer to paper towels. Serve sprinkled with remaining onion and sauce for dipping.
