   pit the dates,soak in water overnight.the next day fill a pot with the dates and fresh water to cover.cook on medium flame until reduced to wet a paste.let cool.fold few layers of cheese cloth and put over a big glass dish.pour the date paste in small batches and squeeze the liquid out.discard the dry pulp and continue until all the paste has been reduced to liquid.pour the liquid in a pot and cook over medium heat until it reaches the texture of honey.serve in container topped with a mixture of nuts.
