Sift together all dry ingredients.

Make a well in the center of the sifted ingredients. Add buttermilk and egg and mix with a knife, using a light hand. Pour approximately 1/2 c. batter onto lightly floured surface and lightly flour the batter.

Using a light hand, pat down the batter with the back of your hand until it is about 1/2-inch thick.

With a clean knife, swiftly cut the batter into 4 equal sections. Gently scoop one of the sections into the palm of your hand and quickly and lightly toss back and forth a few times and drop onto a pre-heated skillet.

Repeat with other sections.

Flip when brown 3 to 5 minutes.

Cool, wrapped in a clean tea-towel.

Serve with sweet savory topping.
