1. in a large bowl, combine all marinade ingredients with 1/4 cu of water; whisk well. Pur into a large Ziploc bag, add steak, and refrigerate for 24 to 36 h.

2. 30 min before grilling, preheat grill to high and remove steak from marinade. reserve marinade for basting.

3. season the steak on both sides with pepper and salt

4. place steak on hot grill for 2 min. rotate 1/4 turn and cook for another 2 min. Turn steak over and add marinade to cooked side. repeat process for a total of 4 mn.

5. reduce heat to low and transfer meat to warming shelf or cooler portion of the grill.

6. close lid and continue cooking for 8 to 12 min for medium-rare, depending on thickness of meat. lift lid, turn steak over and baste with marinade every 2 min.

7. allow meat to rest for 5 minutes afterit comes off the grill.

8. slice thinly across the bias, 1/4 to 1/8 inch thick strips.
