Scalloped Spinach With Potatoes Recipe

   Reserve 1 1/2 c. potatoes and combine the remainder with the spinach.

   Butter a 2 qt casserole with part of the butter and add in remaining butter to potato-spinach mix.

   Separately combine: 1/4 c. lowfat milk 1 teaspoon salt 1/4 teaspoon nutmeg 1/4 teaspoon cayenne 2 tbsp.

   chopped onion 1/4 c. grated Cheddar

   Add in this to potato - spinach mix and pour it all into the buttered baking dish.

   Cover proportionately with reserved potatoes and cover the casserole.

   Bake at 350 degrees for 50-60 min or possibly till potatoes are tender.

   Top with 1/4 c. grated cheese.

   Bake an additional 10 min and serve.
