Preheat oven to 350u00b0. Crumble bread into small pieces; toast until golden, about 35 minutes. Put in a large bowl or place packaged corn bread into a large bowl. Remove sausage from casing. Add sausage and brown over medium heat. Add apple juice; simmer, stirring constantly, until liquid evaporates. Remove sausage to bowl. Set aside. Add oil to skillet. Add onion and celery. Saute until translucent. This is about 8 minutes. Add to bowl. Stir in pears, parsley, thyme, poultry seasoning, salt and pepper. Stir in enough chicken stock to moisten stuffing to your taste. After stuffing turkey breast, bake remaining stuffing in foil covered baking dish about 30 minutes. Remove foil. Continue baking until top turns golden brown, about 15 minutes more.
