Sausage Links With Sweet Potato Hash

   Heat 2 tablespoons of olive oil in a skillet over medium heat. Saute sweet potatoes about 8-10 minutes. Then add 1/4 cup of water, cover and cook an additional 5 minutes until tender. Remove sweet potatoes from skillet and set aside. Add the other 2 tablespoons of olive oil and saute onion, green pepper, smoked paprika, thyme, kosher salt and pepper, cooking for about 4 minutes until crisp and tender. Add the cooked sweet potatoes back into the hash mixture and set aside.

   Heat the sausage in the same skillet about 5 minutes. Serve warm over sweet potato hash.
