Heat an 8-inch nonstick frying pan on medium. For each omelette, heat 1 tsp oil, swirling to coat base of pan. Add 1/4 of sausage, tomato and potato. Saute 2-3 mins.

In a medium bowl, whisk 2 eggs and season. Pour into pan with sausage mixture and cook a few seconds, until just beginning to set. Move cooked egg towards the center of the pan with a heatproof spatula, tilting pan to allow uncooked egg to run to edges. Repeat until omelette is set, 1-2 mins. Sprinkle with 1/4 of cheese and parsley and cook a few more seconds, then fold omelette to cover filling. Slide onto a plate.

To serve, sprinkle omelettes with extra parsley and accompany with hot buttered toast.
