Peel and dice the potatoes Add them to a boiling pan with the water and let them boil until the potatoes are just-barely tender.

While potatoes are boiling, you can multitask because who has time to waitgrease a small pan with the oil.

Whisk eggs and season with salt and pepper.

Once potatoes are just-barely tender, remove from water and add to the greased pan.

Add sausages and eggs.

Place pan in oven (I used my toaster oven because it fit) at 425 degrees F until it is set and golden.

Serve in wedges with garden-fresh salsa or a freshly-tossed salad.
