1.Preheat oven to 350 degrees

2. Put large pot of water on to boil

3. Cut zucchini and broccoli into bite-sized pieces. Toss the first batch of ingredients together in a large mixing bowl.

4. Add the ingredients for the dressing to the bowl of veggies, toss until coated.

5. Add lasagna noodles to boiling water, cook for about half the recommended cooking time (we don't want them overcooked once we bake them, or too dry because they started dry)

6. Place 3 lasagna noodles lengthwise in bottom of nonstick 13x9 pan. Place a layer of sliced tomatoes over the noodles, then a thick layer of the veggie mixtures. Repeat for a total of 3 layers, with the top-most layer being vegetable mixture. Sprinkle 1/2 cup mozzarella on top.

7. Bake for 35-45 minutes until veggies are tender.
