Preheat the oven to 180 Celsius.

Beat the butter until smooth. Add the sugar and beat until fluffy. Add the vanilla, mix well. Add the flour and salt and mix together to combine.

Wrap the dough in plastic wrap and refrigerate for at least 1 hour.

Roll out the dough until approximately 1/2 centimeter thick and use a cookie cutter to form into 40 shapes. Use a smaller round cookie cutter to remove the middle from 20 of the cookies.

Place onto a cookie sheet and bake for 15 minutes until lightly golden. Let cool completely.

Spread jelly onto a cookies with the middle still intact and place the a cookie with the middle cut out on top to form a sandwich. Repeat.

Sprinkle with confectioners sugar.
