Dough:Combine flour, cocoa and salt. In separate bowl, combine butter and sugar. Add egg yolk, milk and vanilla and mix. Add flour mixture until just combined. Wrap in plastic wrap and fridge for 1 hour or freezer for 25 mins.

Assemble: Line 2 baking sheets with parchment. Whisk egg whites until frothy. Roll dough into one inch balls, dip in egg whites, roll in pecans. Press pecans to get them to stick. Place balls 2 inches apt on sheet. Using 1/2 tsp measure make an indent in center. Bake until set 12-15 minutes.

Make caramel by microing the candies and cream in a bowl until smooth abt 1 to 2 minutes. Once cookies are removed from oven, gently press existing identation with spoon and fill with caramel mixture
