Cut the raw salmon into small 1/2-inch cubes.

Put in a food processor and pulse a few times to get into smaller pieces.

Avoid overprocessing because you dont want it to turn into a paste.

Put the salmon in a big bowl and add the egg white, bread crumbs, and some salt and pepper.

Mix together with your hands and form burger patties.

Heat up your grill or stove-top grill pan to medium heat and drizzle the olive oil on top.

Cook patties on a for about 4 minutes on each side until they are golden brown.

As soon as they come off the grill, sprinkle fresh lemon juice (about 1/2 lemon) on top.

Set aside.

Mash up the avocado in a bowl and add the chipotle chili powder, a little salt, and a sprinkle of lemon juice.

Mix well.

To make each burger, spread the chipotle avocado spread on one side of the hamburger bun and top with a handful of arugula, a few slices of red onion, one of the salmon burgers, and the other half of the bun.

Serve with a green vegetable, such as broccoli or asparagus.

Tip 1: If you dont own a food processor, just cut the salmon into smaller pieces.

The egg and breadcrumbs should do their job of holding the burger together.

Also, if you dont have a grill or grill pan, you can certainly cook the burger patties in a deep saute pan.

Tip 2: For the buns, I managed to find sprouted grain buns in the refrigerated section of my health food store.
