Ingredients: 2 cucumbers - seeded; 1 onion; 4 garlic cloves OR 3 teaspoons of minced garlic( or to taste); 3-4 pieces of fresh bread; 4 tomatoes..this can be varied. I skin my tomatoes.; 2-3 cups V-8 juice; 1-2 medium green peppers (seeded); 1/4 - 1/2 cup olive oil; 1/4 cup apple cider vinegar or balsamic; Cumin, oregano leaves, basil leaves, a pinch of tyme,and I throw in some Italian seasoning.

2 cucumbers - seeded
1 onion

In Cuisinart chop up onion, peppers, garlic, cucumber in batches using your off on function and blade.

Pour into large bowl.

Cuisinart bread into fine crumbs, add to above mixture.

chop tomatoes in Cuisinart using off on function, and stop when still reconizable and smaller then bite-size.

Add to mixture in bowl and add olive oil, and vinegar.

Add herbs to taste..we like a lot of cumin.Chill.
