Round Sweet Potato & Jam Sandwiches

   Cook the potatoes in the microwave and mash while hot.

   Preheat your oven to 170C (340F).

   Add the sugar and then the milk, making sure to mix well between each addition.

   Combine the flour and the baking powder together, and then while stirring gently, add to Step 2.

   Next, make the dough into 4 cm wide round balls and gently flatten.

   Arrange on a cookie tray or baking sheet placed on your countertop.

   Next, bake at 170C (340F) for about 13-15 minutes.

   When they are done, cool on a rack.

   Once they have cooled off, slice in half, spread a teaspoon of your favorite jam one by one to make sandwiches.

    From the front going clockwise: blueberry jam, marmalade, strawberry jam and mango jam.
