Rosemary Chicken

   preheat oven to 350F

   melt butter in a large cast iron skillet set to medium high heat.

   chop onion and add to the skillet

   after onions are loose, place whole garlic cloves and the leaves of one twig of rosemary and stir around

   rub the chicken with the salt

   move the onion mixture to one side of the skillet and place chicken into the skillet.

   cook for about 5 minutes on each side, moving the onion mixture around a bit

   arrange the chicken on a bed of the onion mixture.

   place the entire skillet into the oven.

    chop the potatoes and mix them with the onion mixture, taking the skillet out of the oven.

    place the other trigs of rosemary on top and place the skillet back in the oven

    leave it alone for about an hour, periodically checking on it

    when chicken has a deep, golden brown skin atop it, remove it from the oven.

    plate it, it can be served immediately
