Romanian Summer Soup – a delicious recipe with beets with tops, onions, chicken, sour cream, fresh yougurt, cucumbers. Easy to follow and perfect for any occasion.

Servings: persons

6 med beets with tops
2 med onions
8 cps chicken stock
1 cp sour cream
1 cp plain fresh yougurt
2 cucumbers, peeled and coarsely chopped
1 bunch radishes, thinly sliced
1 Tblspn lemon juice
salt and pepper
1 or 2 Tblspn chopped fresh dill

Peel beets and uct in julienne strips. wash and coarsely chop the beet greens and chop the onions. in a loarge pot, heat chicken stock and add beets, beet greens and onions. Cook covered until the beets are tender, about 20 minutes. Remove from heat. Cool to room temp and stir in sour cream and yogurt. add chopped cucmber, radishes and lemon juice. Correct seasoning, sprinkle with fresh dill on individual servings.
