Take the four tuna fillets and wrap two pieces of bacon around the fillet. Place in refrigerator for later use.

In a small bowl combine the red pepper, garlic, parlsey, shallot, vinegar and half of the oil and mix together with a whisk. Hold for later use.

In a hot pan place a teaspoon of oil in a medium pan. Place the tuna steaks with the bacon crease down first. When the tuna and bacon are brown on one side turn them over and place into a 400 degree oven for another 5 minutes.

In another small bowl toss watercress, the remaining oil, orange segments, avocado and salt and pepper. Toss the ingredients and divide into four seperat plates. Remove the tuna from the pan and cut diagonally with a sharp knife.

Place the tuna over the watercress salad and drizzle roasted pepper relish over the tuna. Season with salt and pepper.
