Roast Beef with Shallot-Balsamic Sauce

   Heat oven to 350 degrees F.

   Heat oil in large ovenproof skillet on medium-high heat.

   Add meat; cook 3 to 5 min.

   or until evenly browned, turning occasionally.

   Transfer to plate; set aside.

   Add shallots and water to skillet; cook and stir 3 min.

   or until shallots are softened.

   Return meat to skillet.

   Transfer to oven.

    Bake 45 to 55 min.

    or until meat is done (155 degrees F), stirring shallots after 30 min.

    Transfer meat to cutting board; cover with foil.

    Let stand 5 min.

    Meanwhile, place skillet on medium-high heat.

    Add broth and dressing.

    Bring to boil, stirring constantly to scrape browned bits from bottom of skillet.

    Simmer on medium-low heat 3 to 4 min.

    or until slightly thickened, stirring occasionally.

    Cut meat across the grain into thin slices.
