1
Combine all seasonings and half the salt and pepper to make a rub.
-
2
Coat the roast with the rub and stab the spices into the roast with a fork.
-
3
Don't worry, the holes will seal with seared.
-
4
Cook two slices of bacon is a heavy skillet, remove and save bacon.
-
5
At high heat, sear each side of the roast leaving the meat in the pan until it is easily released and a good crust is formed.
-
6
Remove meat from pan and set aside.
-
7
Pour wine into the pan and deglaze, adding butter, cooking until sauce is reduced to about half.
-
8
Roll out double the amount of Reynolds Wrap needed to wrap the roast, potatoes and baby carrots and place the roast in the center.
-
9
Arrange potatoes and carrots around the sides and top and pour pan sauce over all.
-
10
With another sheet of Reynold's Wrap, form a packet that will lay flat and place the zucchini, red bell pepper, remaining salt and pepper, and two remaining slices of bacon inside.
-
11
Seal well and place packet on top of roast.
-
12
Seal the entire packet tightly, paying close attention to the creases.
-
13
You do not want this to leak!
-
14
After sealed, re-wrap the package again and seal for added protection.
-
15
Now for the fun part!
-
16
Start the engine in your car and let it idle a few minutes and turn off.
-
17
Raise the hood of your car and feel inside to find a good hot spot with room to place your food bundle.
-
18
The exhaust manifold is usually a good place, or if there is enough clearance, the top of the radiator works well too.
-
19
You may want to crumple a ball of foil that is the same height as your food bundle, put it in the spot you want to place your food and shut the hood.
-
20
If your ball of foil is crushed, that's not a good place to put your food.
-
21
Once a good spot is found, use wire to secure your package down and hit the road!
-
22
It's a good idea to check your package after about 15 minutes to make sure it's still secure, and every couple of hours to make sure it isn't leaking.
-
23
After about 250 miles, your roast and zucchini side is tender and delicious and best of all, home-cooked!
