Rice And Artichoke Salad

   Cook Rice-a-Roni according to the instructions on the box.

   In a large bowl mix together all of the ingredients except the rice and artichokes.

   Drain artichokes and reserve marinade. Chop the artichokes and mix them and the cooked rice into the bowl with the other ingredients. Add some of the artichoke marinade if it needs moisture. Add salt and pepper to taste. (It's pretty salty from the rice, so you might want to taste it first.)

   I must say it is a meal if you add cooked or grilled chicken. It is one our favorite quick meals.
