For the homemade cake mix:

In a food processor, combine all of the dry ingredients and pulse a few times to mix them up. Add the butter and pulse until it has been incorporated. Keep in mind, it will still be pretty dry. You can also do this with a pastry cutter.

Add all ingredients into a bowl and mix until combined. You are going to need a lot of red coloring, so start with 1 tablespoon and keep adding more until you have obtained your desired color.

Using a cookie scoop, scoop out balls of dough and place on a parchment paper lined cookie sheet about 2 inches apart. Bake at 350 F for 10-12 minutes. When done remove them from the oven and allow them to cool on the pan for a couple minutes. Then put them on a cooling rack and completely cool them before frosting.

In a large bowl using a mixer, mix cream cheese and butter together until fluffy. Turn mixer to low and beat in powdered sugar, cinnamon and add vanilla. Beat on high for 5 minutes.

Frost the bottom of half of the cookies, top each with another cookie and enjoy!
