1
heat oil in medium to small pan.
-
2
( fry daddy with basket works best but I don't have one)
-
3
slice peeled bananas to desired thickness..I prefer between1/2 inch.
-
4
and 3/4 in.
-
5
slices.... set aside..
-
6
in a medium bowl sift together pancake mix, flour and baking soda.
-
7
add ingredients stated on back of packet and mix well.
-
8
get ur cooling rack ready!
-
9
:)
-
10
coat banana slices in pancake mix one at a time and drop into hot oil...
-
11
I do about 4 at a time so they don't stick to one another.
-
12
fry until lightly browned and crispy.. this doesn't take long..
-
13
if it sticks to bottom of pan.. no worries just gently scrape it up with a spoon then it'll float.
-
14
remove from oil and place on cooling racks to drain and cool.
-
15
cool completely!
-
16
while cooling get a small microwavable dish out..
-
17
put your choco chips in the dish and microwave on defrost until melted.. stir occasionally during process.. so it doesn't burn..
-
18
now that ur chocolate is melted and ur balls are cooled.. coat balls in chocolate and place on a wax paper lined cookie sheet.
-
19
so that no balls are touching.
-
20
sprinkle warm chocolate balls with various sprinkles.. (optional)
-
21
place your chocolate balls in the fridge for about an hour.
-
22
arrange on a plate and serve!
-
23
keep uneaten balls in the fridge or a cool dry place.. :) enjoy!
-
24
hint: if batter is to thick ad water until desired thickness.. if to runny add flour until desired thickness.. ur outcome will depend on brand and type of pancake batter u use..
