2 tablespoons olive oil
1 red bell pepper, seeded, chopped
1 Guajillo Chile, seeded, chopped
2 cloves garlic, chopped
4 shallots, chopped
1 cup apple cider
1/4 cup honey
1 cup chicken stock or chicken glaze
4 veal chops, Frenched
Salt and pepper
Olive oil
1 cup red chile glaze

Heat oil in saucepan.

Add the first 4 ingredients.

Cook until soft.

Add the cider and reduce to 1/4 cup.

Add honey and stock.

Let it simmer until reduced to 1/2 and puree, then pass through a fine chinoise and season with salt and pepper.

Brush them with olive oil and grill on medium heat until medium rare.
