1 1/2 tsp. oregano
1/2 tsp. red pepper
1 Tbsp. Tabasco
2 c. onions, chopped
2 c. bell pepper, chopped
2 c. celery, chopped
2 lb. sausage (Thompson's)
ham hocks
rice
salt and pepper

Soak red beans overnight; drain.
