Raw Sweet Potato Sticks

   Peel sweet potatoes.

   Cut into sticks.

   Fill a bowl with water and a few pieces of ice.

   Put sweet potato sticks in water and swish around.

   Leave in water for a minute or two.

   Take sticks out and pat dry.

   This will prevent sticks from turning brown.

   Serve sweet potato sticks plain or with dip.

   Several to try: -ranch dip -ranch dip with salsa added -yogurt mixed with honey

    Store sticks in refrigerator.

    Will last for several days.

    Repeat ice water bath after a day or two to refresh limp sticks.
