Ranch Corn Muffins

   Mix eggs, milk and oil with wire whisk until well blended.

   Add flour, cornmeal, baking powder and dressing mix; stir just until dry ingredients are moistened.

   Gently stir in peppers.

   Scale 1/3 cup of the batter into each of 60 muffin cups sprayed with cooking spray.

   Bake in 400F-conventional oven for 12 to 15 minutes or until knife inserted in centers comes out clean and tops are lightly browned.
