Combine dates and rum in pot. Bring to a boil. Then remove from the heat and set aside.

Boil a large pot of water and add quinoa, cooking until tender. Drain well.

Combine quinoa, milk, cream, sugar, salt, cinnamon and nutmeg in large, heavy bottomed saucepan. Warm over medium heat. Bring to a boil, stirring constantly. Once boiling, reduce heat to low. Stirring frequently, cook about 15 minutes or until most of the water has evaporated and mixture is thick. Whisk egg yolks together in a large bowl. Add 1 cup of quinoa mixture to the eggs and whisk to blend thoroughly. Poor egg and quinoa mixture back into the saucepan.

Add dates and rum to saucepan and continue stirring until mixture is thick. Do not let the mixture boil at this point. Remove from heat. Let cool.

Transfer pudding to serving bowl. Refrigerate until chilled. Sprinkle with cinnamon before serving.
