Queso Chicken with Tomatillo Salsa

   Bring water to boil in large saucepan.

   Add tomatillos; cook 5 min.

   or until tender.

   Drain, reserving 1/4 cup cooking water.

   Blend tomatillos, 2 Tbsp.

   reserved water, onions, garlic and chipotle peppers in blender until smooth.

   Add additional reserved water to thin, if needed.

   Heat oil in large skillet on medium heat.

   Add chicken; cook 6 to 7 min.

    on each side until done (165 degrees F).

    Top chicken with cheese; cover.

    Simmer on low heat 1 to 2 min.

    or until cheese begins to melt.

    Place chicken on platter.

    Spoon sauce over chicken.
